Whipped Coconut Cream

Oh Yes. It happened. It is delicious. I finally made whipped coconut cream!

This opens up a whole new world of possibilities. It could be a topping for: oatmeal, quinoa, granola, chia seed pudding, vegan ice cream or perhaps even a spoon full of it in your coffee!

Or you can just eat it plain like my kids and I, ha! (I used to love those huge containers you could buy in the freezer aisle, and I would literally just eat it all straight out of the tube! I wonder why I was sick all the time!!!)

Ingredients:

1-2 tablespoons of pure maple syrup or honey

1/2 teaspoon vanilla extract

***CHILL THE COCONUT MILK IN THE REFRIGERATOR OVERNIGHT **** (This is the WORST patience game ever)

Next morning, open can, pour coconut water into your smoothie that I know you're making. ;) All that's left should be the fat. Goooood fats! Feed our brain fats!! (seriously save that shit though, you may want it to thin out the cream later!) Pour the coconut milk into your mixer and mix 3-5 minutes. Do a happy dance whilst mixer is doing all the work!! Add sweetener and vanilla extract after coconut milk is thoroughly mixed and whipped and mix a few seconds until well blended. If you want, you can also thin your whipped coconut cream with the coconut water at this time. Well, Ill be busy the rest of the day licking my mixing bowl and hiding it from the kids!
